Bottlegourd Curry recipe - Lauki malai ki sabji

Bottlegourd or Lauki is not a very liked vegetable in many families. It might be the texture or the taste of the final dish which has caused many people to dislike it. Honestly, in my opinion, lauki has very less to no taste of its own. It is totally our recipe which can bring interesting flavours and textures to this humble healthy veggie. This recipe is very close to my heart. My mother used to make this for me back home. Whenever I wasn't very hungry and wanted something light, she made this comforting curry. I personally enjoyed this curry as it is - no roti no rice. Just a bowl full of this hearty curry would make me feel warm and cosy even in the chilly Nashik winters!

Ingredients:
  • Bottlegourd/Lauki - 250 gms small dices
  • Desi cow ghee - 1 tsp
  • Mustard seeds - 1/4 tsp
  • Cumin seeds -  1/4 tsp
  • Hing/ Asafoetida - 1/4 tsp
  • Turmeric powder - 1/4 tsp (Optional)
  • Fresh Cream - 3 tablespoons
  • Crushed black pepper - 1/2 teaspoon
  • Salt - to taste
  • Sugar - 1/4 tsp (optional)
  • Coriander - 2 tablespoons finely chopped

How to make Creamy Bottlegourd Curry?

Step 1 - Tempering
  • In a wok/kadhai heat some ghee
  • Once hot, add mustard seeds, let them crackle
  • Now add cumin seeds and asafoetida/hing
  • Add turmeric powder (skip this step if you like. Although you won't get the slight yellow colour that you see in our picture)
  • Immediately add the diced lauki and stir
Step 2 - Cooking the curry
  • Stir the diced bottle gourd for 1 minute
  • Cover and cook on a low flame for 10 minutes
  • Add salt, black pepper and sugar (skip the sugar if you don't like sweetness in your curries)
  • Add the cream and stir well
  • Cover and cook for another 10 minutes
Step 3 - Serve
  • After cooking switch off the flame and add chopped coriander
  • Mix well
  • Serve hot with Rotid, Phulkas or Chapatis
